Challenges that need to be overcome:

  • The higher price is still an argument, as the real costs of conventional agriculture are not included in the prices.

  • There is a lack of suitable prefabrication.

  • So-called B-goods need a change of image.

  • Supply chains need to be adapted.

  • Cooks and kitchen staff need to be sensitized to the issue.

  • Time pressure in the catering industry is high - handling needs to be simplified.

  • Digital tools may help to improve the market overview for canteens.

  • Lunch currently has a very low priority. There needs to be a change in awareness on the part of consumers.

  • The functional effect of food, i.e. how to avoid tiredness after lunch, needs awareness and education of all those responsible for the canteen food.

These are just a few of the challenges on our way to our goal.

How do we achieve this? Only Together

We are currently working with all those involved in the knowledge and value chain to develop tools, mechanisms and concepts aimed at bringing at least 35% regional organic produce fresh from the field to the table in out-of-home catering. Our goal: initial pilot projects that will provide impetus and become a beacon by the end of 2024.
